Hearty Chicken & Veggie Stew

This easy crockpot meal is a comforting yet simple delight for busy nurses. Servings: 4 | Cook Time: 6–8 hrs (low)


Ingredients:

1 lb boneless, skinless chicken thighs



2 carrots, chopped



2 celery stalks, chopped



2 small potatoes, cubed



½ onion, diced



1 garlic clove, minced



3 cups low-sodium chicken broth



¾ tsp thyme



Salt & pepper to taste

Instructions:


Add all ingredients to the slow cooker.

Cook on low for 6–8 hours or high for 3–4 hours.

Shred chicken before serving.
