Vegan Packed Lentil Soup

Save time and energy with this deliciously packed with goodness lentil soup. I personally love this recipe when I need to boost energy and also keep a frozen portion available in the freezer.

Ingredients
1 cup dried lentils, rinsed
2 carrots, chopped
2 celery stalks, chopped
½ onion, diced
½ zucchini, chopped
3 cups vegetable broth
1 cup water
½ tsp cumin
¼ tsp turmeric
Salt & pepper
Instructions
Add all ingredients to the slow cooker.
Cook on low for 8 hours or high for 4 hours.
Blend a portion of the ingredients for a creamier texture if desired.

Perfect lunch for busy nurses.
