Vegan Packed Lentil Soup

Save time and energy with this deliciously packed with goodness lentil soup. I personally love this recipe when I need to boost energy and also keep a frozen portion available in the freezer.



Carrots, celery zuccini, lentils and onion

Ingredients


  • 1 cup dried lentils, rinsed

  • 2 carrots, chopped

  • 2 celery stalks, chopped

  • ½ onion, diced

  • ½ zucchini, chopped

  • 3 cups vegetable broth

  • 1 cup water

  • ½ tsp cumin

  • ¼ tsp turmeric

  • Salt & pepper




Instructions


  1. Add all ingredients to the slow cooker.

  2. Cook on low for 8 hours or high for 4 hours.

  3. Blend a portion of the ingredients for a creamier texture if desired.
